Chewy Granola Bar Recipe:
- 1 1/2 cups crispy rice cereal
- 1 1/2 cups Kashi Go Lean Crunch Cereal
- 1 1/2 cups old fashion oats
- 1/2 cup packed brown sugar
- 1/2 cup wheat germ
- 1 egg, scrambled
- 2/3 cup honey
- 2/3 cup peanut butter
- 1 tsp vanilla extract
- 1/4 tsp cinnamon
- 1/2 tsp salt
- 1/4 mini chocolate morsels
Preheat oven to 350 degrees. Grease or line a 9×13 inch pan.
In a large bowl combine the rice cereal, Kashi cereal, wheat germ and oatmeal.
Mix brown sugar, honey and peanut butter in a small sauce pan. Stir over medium heat until just boiling. Add to cereal mixture along with vanilla extract, cinammon, salt.
Scramble one egg. Add to mixture.
Let mixture cool for a minute or two and then add frozen chocolate chips.
Press into the prepared pan using a spoon or spatula. Bake at 350 degrees for about 15 minutes.
I like these the best stored in the fridge. It makes them taste almost like a dessert. They are a little hard when stored in the fridge, but if you set them out for about 5-10 minutes before you eat them they are really chewy and delicious!
